How Your Chili Will Be Judged

Every chili is judged on five criteria.

  1. Apperance

  2. Smell

  3. Taste

  4. Heat Balance

  5. Texture/Mouthful

Each one is scored on a scale from 0 to 6, using whole numbers only. The five scores are added together for each chili's total.

Appearance

Chili should look appetizing and reflect the ingredients used. A red chili should have a rich reddish-brown color, and a verde (green) chili a green color, never a grey hue.

Smell

Chili should have a pleasant aroma, and the smell should hint at what's in store when you taste it.

Taste MOST IMPORTANT

Above all, taste matters most. It should be a combination of protein, peppers, spices, and so on, blended so that no single ingredient is dominant.

Heat Balance

You'll notice this most in the aftertaste: the heat from the spices and peppers that lingers after each bite. Heat should be present, but not overpowering.

Texture / Mouthfeel

Chili needs a good ratio of sauce to protein and a thick consistency. It should not be dry, watery, grainy, lumpy, or greasy.
